Weekly Menu – 10/31

I was excited to see that one of my usual vendors at the farmer’s market had fresh free-range chickens this week.  I bought two and plan to break down the pieces tomorrow.  We used our last frozen chicken breast a few weeks ago, so we are looking forward to a meal that doesn’t involve chopped up leg and thigh meat.  We are running low on homemade chicken broth as well, so I will be making more of that with the carcasses, probably next weekend.

We’ve been making homemade pizza once a week for the last several weeks, and I think we’ve perfected the process.  Our current favorite toppings are pizza sauce, mozzarella, parmesan, onions, bacon and banana pepper rings.  Last week we got a bit creative and used leftover taco meat to make a taco pizza — olive oil, garlic, mozzarella, cheddar, taco meat, green onions and tomatoes, served with a dollop of sour cream.  Very tasty!
